Innovative sundaes for self-selection as well as sweet and salty flavor combinations are conquering the German market. The use of exclusively natural ingredients and reduced-sugar variants are also highly popular among German consumers, reflecting the shift toward healthier eating habits. At the same time, German ice cream parlors are increasingly offering their customers unusual varieties that go far beyond the classic flavors. No matter whether it is licorice sour cherry, Aperol Spritz, cheesecake, popcorn or liverwurst – the showcases are filled with imaginative creations.
Ice cream trends 2023: Vegan ice cream in focus
There is also a trend towards vegan ice cream – with interesting variations, such as paprika, cucumber or basil ice cream. Even classics like vanilla ice cream are increasingly being made vegan due to rising demand and thanks to plant-based sources like soy, almond, oat and pea protein. Also increasingly on the rise are spice flavors such as cardamom, nutmeg, clove or chai. In fact, 27% of German consumers say that they are interested in ice cream with more intense and spicy flavors.

Besides this variety, the ice cream industry is also increasingly focusing on functional ice cream varieties with ingredients such as proteins, fiber and vitamins to meet consumers' needs for health and fitness. In the opposite direction, so to speak, goes ice cream with alcohol, which offers a luxurious and stimulating alternative for adults. In addition, there are more and more allergy-friendly ice cream varieties (e.g. gluten-free), which also allow people with special dietary needs to enjoy ice cream without any worries.

Last but not least, the 2023 ice cream season is all about sustainability and environmental awareness. Ice cream parlors and manufacturers are increasingly turning to eco-friendly concepts to reduce their environmental footprint. Plastic packaging is a thing of the past; instead, restaurateurs prefer eco-friendly packaging made from recyclable materials such as coconut shells or reusable tableware such as ceramic, porcelain or stone bowls. Manufacturers are also paying increasing attention to environmentally friendly packaging that contains little plastic and can be disposed of sustainably. A focus on high-quality and regional products also contributes to sustainability.
