Raclette at the restaurant:

Winter is just around the corner, and Christmas and New Year's Eve are also not long in coming – which means that the high season for raclette is about to start. The traditional Swiss dish presents itself in different variations as an excellent seasonal choice for gastronomy.

Idea 1: Classic raclette

Of course, you can play it safe with the classic variant. You will need sliced Swiss raclette cheese, small jacket potatoes, and pickled vegetables such as pickles, silver onions, or baby corn. In addition, you can offer meat or fish for self-roasting or other side dishes such as mushrooms, tomatoes and squash. Serve fresh bread and spices with the classic raclette.

Idea 2: Raclette with varied cheese courses

Bagnes, Orsière or Goms cheeses are usually used for the spicy-bitter raclette cheese, which are ideal for melting in the pans. Beyond the traditional sorts, however, the world of cheese has much more variety to offer. How about a raclette menu with several courses?

Mild cheeses such as Gouda or butter cheese with vegetables make the start, spicy cheese with meat or fish is chosen for the main course. To finish, serve sweet raclette with fruits such as pineapple, peaches, apples, dates or figs. A suitable wine to accompany the individual cheese courses rounds off the menu.

Idea 3: Raclette in the gourmet version

Raclette in the restaurant can also carry a spark of extravagance. Along with a fine selection of cheeses, you can offer slightly unusual side dishes, such as fine fillet of beef or lamb, high-quality fish, seafood such as shrimp or crab, or special vegetables such as blue, purple or black potatoes. Complement the gourmet dish with freshly baked bread and select wine specialties.

Idea 4: Vegan raclette

Raclette is also delicious in the vegan version. If you leave out meat and fish, then many of the raclette ingredients such as vegetables, spices, bread and herbs are already plant-based. To ensure that your vegan guests can also fully enjoy raclette, you can offer plant-based alternatives such as vegan Gouda or mozzarella instead of classic raclette cheese. Vegan raclette cheese is now available on the market. In addition, falafel or tofu can be served.

Idea 5: Raclette food box

Many people prefer raclette evenings at home. With raclette food boxes you offer your guests a convenient option for their own homes. This idea holds extra sales potential for you and can be prepared quickly. Simply fill the food boxes with raclette cheese slices, vegetables, homemade bread, butter, side dishes, desserts and delicious wines and offer them for pickup or delivery.
